On Tiktok, I began sharing my mother’s recipes. When my mother was alive, she had a strong love of baking and cooking. She always welcomed others to her table and fed anyone that said they were hungry. Her dream was to be a bakery and though she was never professional. Cooking was how she coped.
One of the things she was best at was doing a lot with very little. She didn’t know how to cook for small groups. For smaller portions, she prepared meals the same way. This recipe was an “alternative” version of a casserole she would make when I was growing up. It’s not exactly a casserole, sometimes it had been refer to as a lasagna, but it isn’t that either.
The original version used Sloppy Joe sauce as the burrito fillings. Everything is the same except for the removal of the mild taco seasonings and the addition of the sauce.
This is not for healthy eaters. No, I am not a professional chef, just a home cook. So if these recipes shares seem unpolished, it’s because they are.

Ingredients
- 2 packets mild taco seasonings
- 1 lbs packet of sharp cheddar
- 4.5 lbs hamburger meat
- 2 packets of flour tortillas
- 9 x 13 casserole dish or metal cake pan
- Skillet
Preheat oven to 350 F degrees before beginning to brown the hamburger meat in a skillet on stove range. Keep stirring occasionally to prevent burning. Also drain the grease collecting before adding the taco seasonings. Follow the directions on the back of the mild taco seasonings. After simmering finishes, start assembly.



Lay your tortilla in your pan. Now, begin filling it with a mixture of the hamburger meat filling [or Sloppy Joe sauce] and the shredded cheese. Keep doing this until you have filled your casserole dish. You want to pack as many rolled and filled tortillas as you can into the dish. Anything that you have remaining of your mixture gets poured on top with any remaining shredded cheese.

Cook in stove for 10 minutes or until the tortillas are browned and rigid. Of course, you can always change your amounts. If you do it this way you can get 6 large servings or 8 smaller ones.
The food isn’t “pretty”, but it was filling. You can also exchange the meat for something faux, if you don’t want the hamburger version. The flavor will change.
